Perfect holiday creamy Layered Apple pie

I grew up loving apples. My dad has a philosophy that an apple a day keeps doctor away. And I’m not kidding. 🙂 He offers me apple everytime I visit.

This Layered Apple pie is dedicated to my dad, an apples lover. There is no kind that he doesn’t know or love.


So, this is what I will share with you today.

Crustless, creamy layered apple pie you absolutely need to make. It tastes and looks like it’s filled with a vanilla cream, but trust me there is no vanilla inside…all apples.

The fact that this pie contains very little butter and flour makes it a perfectly healthy choice for any occasion.

I love it hot with ice cream or cold with my afternoon coffee….while my Marco loves this layered apple pie for breakfast.

Step 1

Melt the butter in the milk, over a low heat. Let it cool down completely.

Step 2

Peel the apples and then slice them very thin them with a mandolin, transfer them in a bowl and sprinkle them with lemon juice and mix them well to keep them from darkening.

Step 3

In a big bowl, work the eggs and sugar with the mixer and add the grated lemon peel, pinch of salt and the sifted flour with baking powder. Work on the compound to make it smooth and homogeneous.

Continue to work with the blender and incorporate milk with butter (it must be well cooled otherwise it will block the baking powder).

Add the apple slices and mix with a spatula to wrap them in the batter.
Coat the cake mold with paper (or grease it and then sprinkle with flour), pour the mix and level it a spoon.

Bake it in the oven at 200 ° C for about 30 minutes covered with aluminum foil. After the first 30 minutes have passed, remove the foil and bake for another 15 min. Once 45 min has gone by, check the cake with a toothpick sticking it in the center of the cake, if it’s not dry, continue baking.

Layered Apple pieThe layered apple pie must be golden and well cooked. From my experience, 45 min was enough for me but your oven might be different so make sure you check it.

Let it cool, dust with powder sugar (I like to add cinnamon too) and serve in slices.


  • 6 – 7 large apples (golden)
  • 20 grams of butter
  • 70 grams of flour (00)
  • 100 ml of milk
  • 2 eggs
  • 50 grams of sugar
  • 1 baking powder
  • juice of 1 lemon
  • grated lemon zest
  • pinch of salt
